Huevos Rotos

The combination of flavors in this dish is brilliant in its simplicity. Huevos Rotos, literally "broken eggs," are fried eggs on a bed of ham and potatoes. Super easy to make and a real treat for both kids and adults! Tip: Also delicious on a hungover day ;-)

For 2 persons
– 3 medium potatoes
– 2 eggs
– 100 grams of Iberico ham
– Oil for frying
– A little salt

Preparation
1. Peel the potatoes, slice them thinly (about 3 mm thick), and fry them. When they are golden brown but not too crispy, remove them from the oil and pat them dry with parchment paper. Alternatively, you can cut them into fries or strips—they're just as delicious!
2. Remove a package of Iberico ham from the refrigerator, let it come to room temperature and open the package so that you can easily remove the slices.
3. Fry eggs with a little olive oil. Make sure the yolk is still runny.

Serve
Place the potatoes on a plate and sprinkle them with salt. Arrange the slices of Iberian ham on top. Then place the eggs on top and crack them with a knife, allowing the runny yolks to mix with the other ingredients. Serve the dish with a slice of bread.
